  1. Season the steak with salt and pepper at least 4 hours in advance. Can be done the day before.

  2. Freeze the steak for 30 minutes before cooking.

  3. Pre-heat the oven to 200º and place aluminum baking sheet in oven.

  4. Sear the steak in a cast iron skillet, or black pan in butter for 45 seconds per side, and the ends too.

  5. Place Place on the baking sheet in the oven and cook until 125º, about 30 minutes depending on the thickness of your steak.

  6. Rest covered tightly with aluminum foil for up to 10 minutes.
