Estimates… I didn’t measure - could substitute fresh peaches and ginger

Ingredients:

  • frozen peaches

  • 1/4 teaspoon cardamom

  • 1/4 teaspoon coriander

  • 1/8 teaspoon cloves

  • 1/2 teaspoon ginger

  • 1/2 teaspoon black pepper

  • 1/8 teaspoon red pepper flakes

  • 1/2 cup light brown sugar

  • 1/2 cup apple cider vinegar

  • water

  • small onion chopped

  • 1/2 cup thickened stock

  • 2 tablespoons cream

Method:

  1. toast spices and reserve

  2. sweat onions in olive oil until translucent

  3. add water, sugar cider, peaches and herbs.

  4. bring to boil and cook until peaches are soft and sauce is like a syrup

  5. reserve some peaches for the plates

  6. but the rest in a blender and purée on high for two minutes

  7. Season

  8. thicken the stock, and add 1/3 cup of purrée to stock

  9. add cream and season.
